This presentation is intended to be used by clinicians during discussion with patients about carbohydrates and blood glucose. It is culturally tailored to reflect foods commonly consumed by Cambodian Americans. PDF (59 slides) for printing.

Resources for this project were provided by Harborview Medical Center, Seattle, WA.  Dr. Carey Jackson served as clinical adviser. Meetings were held with dietitians and primary care providers who work with Cambodian patients. Time was spent with HMC’s Cambodian caseworker / cultural mediator Jeniffer Huong, learning about Cambodian food and visiting Cambodian grocery stores in the Seattle area. A literature review on nutrition, diabetes and cross cultural care was conducted.

This project would not have been possible without the support of Mrs. Keo Chanbo (www.chanbokeo.com); Mr. Saren Nget; Seattle’s Angkor Market (White Center) and Queen’s Deli (White Center); and Harborview Medical Center staff Jeniffer Huong, Yetta Levine, Dr. Carey Jackson, Christine Wilson Owens, Phalla Kith, Iwona Steplewska and Lorren Negrin.
